Sometimes you just need chocolate.  And quick.  Am I right?  When I saw this recipe I thought it was perfect for those days when you need something sweet (and when you’re craving chocolate) but don’t want to run out and get some. (And when you’re trying to make things at home anyway…ahem.)  And it doesn’t involve an egg yolk or any other possibly frightening and potentially disastrous ingredients.  And you probably have everything you need to make it right now!

Easy Chocolate Pudding (recipe found here) Serves 4

  • 3 tbsp cornstarch
  • 3 tbsp unsweetened cocoa powder
  • 1 1/2 cups milk
  • 2 tbsp sugar
  • 1/8 tsp salt
  • 1 tbsp butter
  • 1/2 tsp vanilla extract

Bring 1 cup of the milk to a boil in a small saucepan.  Meanwhile, mix the cornstarch, cocoa powder, sugar and salt in the remaining 1/2 cup of milk with a whisk.

When the milk first starts to boil, turn the heat down to medium-low and add the milk-cocoa mixture.  Whisk it continually until it starts to thicken.  Mine only took a minute or two.  If you run a spoon down the middle of the mixture and it runs a clear path so you can see the bottom of the pan, you’re good to go.

Once it’s all thick, remove from the heat and add the butter and vanilla and mix to blend.

Pour into the container of your choice and refrigerate for a few hours until it’s nice and cold.  To prevent a skin from forming, put a layer of plastic wrap right on top of the pudding.  Then serve.

It’s so easy!

And rich and creamy and satisfying.  A little goes a long way.

It fixes that sweet tooth right up.  I’d love to try it in a dark chocolate variety!
